This option lets you reorganize and/or hide views as they are displayed in the Views pane (located in the lower left-hand corner of the UI, by default), depicted in the image below.

The Preferences > Views window depicted below is split into 2 panels.  On the left are hidden views (empty by default), and on the right are the visible views.

To hide a view, select the desired view(s) on the right-hand side of the window (the "visible views" panel), then click the "less than" (bottom) arrow icon. You will see the selected view(s) moved to the left side of the window (the "hidden views" panel). If you select a folder in the visible panel, then click the bottom arrow, all the views within the folder will be moved to the hidden views panel. When all of a folder's contents are hidden, the folder is not visible in the Views pane.

To show previously hidden views, select the view(s) in the hidden views panel, then click the "greater than" (top) arrow.  You will see the selected views moved to the visible panel, where they will be visible again in the Views pane.

To move around a view (out of its current folder, or within its current folder, but in a different position), click on the desired view in the visible views panel, drag your mouse to the desired location within the tree, then release the mouse. The view will be moved to your selected location. The folder itself cannot be moved.
